Singapore Distillery's Humble Beginnings

Singapore Distillery is a homegrown distillery that started in 2020 amidst the global pandemic. They are all about creating gins inspired by local flavours, with ingredients sourced from homegrown markets! Ashwin Sekaran, the founder and head distiller of Singapore Distillery, shared about his family holiday to London back in 2017, where he attended a Craft Distilling expo and was exposed to the world of craft distilleries and gin. A distillery tour opened his eyes to the importance of using expensive and hard-to-find botanicals like cardamom, cinnamon, fresh limes and cloves to create the best quality gin - all coincidentally available in Singapore. There’s no better place than home to start a distillery right here on our sunny island, and that’s exactly what he did!

Our team was treated to a distillery tour where we met with Ashwin and his fellow distiller, Sassi. We were greeted by a 500-litre custom copper still, where all the magic happens. It is hand-made and by far the biggest still in Singapore. The copper helps to remove the sulphur compounds from the botanicals which can make the gin have a musty smell and flavour. This results in their gin having a cleaner, rounder and more balanced taste. 

What makes Singapore Distillery stand out from all the other distilleries in Singapore? 

According to Ashwin, it would be their range of gins and the fact that they’re not just flavoured versions of base gins. Each of their gins has its own bespoke recipe and distillation method. He felt that the only way to extract and showcase the best-combined flavours from Asian botanicals, which tend to be very unique and strong in flavour, was by building each flavour from scratch - a laborious process that ensures the best taste, quality, and heart. With a taste test of our chosen gin flavours, we quickly understood what Ashwin meant by the importance of capturing the essence of a familiar flavour:   

 

“Stolen Roses Gin is inspired by the Bandung. It’s such a beloved drink 

that we all love here and I wanted to see if I could make it into a gin

that would really capture the flavour and aroma of a nicely made 

Bandung. It even works well with milk.”

We asked Ashwin about what he wanted people to know about distilleries and locally produced gin. He shared that the funny thing about what makes Singapore local is that as a country, we have influences from all over the world; Southeast Asia in particular. The only way to encapsulate flavours from the different cultures is to make use of ingredients from all over Asia - truly showcasing the Singapore Spirit.
