Our pistachio apricot cake uses apricot puree made exclusively using apricots from the Rhone-Alps region of France. The Bergeron variety of apricots are known for their juicy flesh that yields a tart, sweet flavour. We pair our apricot cream with a roasted pistachio chantilly, made with Mediterranean pistachios that have a natural vibrant green hue and smooth, intense flavour. Topped with edible marigold petals and white chocolate tablettes.
