The Sudachi fruit takes front and centre stage in our April Special with our Refreshing Sudachi Cake – we are using 100% sudachi juice which is the speciality of the Tokushima prefecture in Japan. Sudachi is a citrus fruit that is a cross between yuzu and mandarin orange, which gives it a unique and distinctive flavour with hints of spice. The sudachi fruits used in our juice are picked young, giving rise to the most pronounced flavour. We pair the juice with a sudachi-scented sponge and light sudachi Chantilly to bring out the delicate flavour of this fruit.
